Incorporating wild game into a brunch for Mother’s Day isn’t difficult, but save the steak and eggs for dad’s day next month. Instead, go for something light and seasonal, like this recipe for a frittata made with wild turkey and morels. Roast or grill the turkey breast the night before and save a cup of leftover meat. You could also use braised turkey legs and, of course, if you’re like me and can’t find any morels, feel free to substitute portabella or crimini mushrooms from the store.

With a flock of laying hens, we are always looking for ways to use eggs, and frittatas are a staple but they do take patience, as it seems the center never cooks through. Most recipes call for flipping the eggs into another skillet to cook the top, but after several failed attempts at that, I came up with a simpler way: the broiler. Just be sure to set the heat to low and monitor the eggs closely lest you burn them.

Turkey and Morel Frittata Recipe

– 2 Tbsp. butter or canola oil
– 1 small onion, diced
– ½ red pepper, diced
– 3-4 medium-size morels, sliced into strips
– 1 cup cooked turkey meat, diced
– 8 eggs
– ½ tsp. dried thyme
– Kosher salt
– Pepper
– ¼ cup grated Parmesan cheese

1. Set top rack of the oven 4 inches below the broiler and preheat the broiler on low.

2. Melt the butter in an oven-proof skillet set over medium-high heat, then saute the onion and red pepper until tender, about 3 to 5 minutes.

3. Add the morels to the pan and stir. Cook for another 3 to 5 minutes.

4. Stir in the diced turkey breast. Cook until heated through.

5. In a small bowl, beat the eggs until yolks and whites are thoroughly incorporated. Add the thyme and salt and pepper to taste.

6. Pour the eggs into the hot pan. As the eggs cook, lift the edges with a rubber spatula and tip the pan to let the eggs run underneath.

7. Cook over medium heat for about 5 to 7 minutes or until the eggs just start to set. Transfer the pan to the oven and continue cooking until eggs are done. Monitor carefully and if edges start to get too brown while center is still wet, place skillet on the lower rack. The eggs should be cooked through in about 7 to 10 minutes.

8. Top with grated Parmesan and serve.
